Friday is a Giada shrimp and rice dish, with a sumo orange salad (it's sumo season!)

Saturday is the Milk Street lomo saltado, which will be served with french fries (just from frozen) and a Peruvian salad I found to go with it, since the saltado is a Peruvian recipe.

Sunday dinner is at my mother's.

I made an Italian Cream Cake on Monday, so that should have us covered for desserts.

Grilling tonight with this warm weather. Hamburgers for DH and teriyaki salmon for the rest of us. I am looking forward to daylight savings time next weekend!

Lots of great ideas here.

This week we're doing:

chicken tacos (instant pot saucy chicken recipe we love)
chicken quesadillas with the leftovers
smashburgers and homemade stove top mac n cheese and kale chips
leftover mac n cheese and grilled shrimp
thai basil chicken stir fry (this will probably last two nights)

We'll have fresh veggies with all of the above - steamed, roasted, or sauteed. Things like swiss chard, kale, sauteed broccolini, roasted green beans, steamed broccolini, etc. I usually pick that sort of thing up on my way home from work every 2-3 days so I don't really know when I meal plan.

In the past I have made red beans & rice (this includes sausage), gumbo, or jambalaya. Those are the things I miss, probably in that order, from living in New Orleans. Well, dinner items anyway. I miss beignets with iced cafe au lait most.

pulled bbq chicken (sandwiches for DH and DS), mac and cheese, red cabbage/carrot/jalapeno slaw

rice bowls with ginger and sweet chili tofu, edamame, cucumber, corn, carrot, avocado, cilantro, and a variety of everyone's favorite asian sauces. also spring rolls probably.

chicken sheet pan fajitas with beans, rice, homemade guac, pico, and lots of other toppings

out one night so they can do whatever
