Anyone try to cook without much oil?

I have high cholesterol and as such am careful about oil in my food.

Any ideas on how to reduce using oil to cook my food?

Use unsaturated fats, like olive, avocado, canola, sunflower, and grapeseed oils. Replace some or all butter with heart-healthy oils. In baked goods, use applesauce, bananas, and other fruit/veggie purees to add moisture in place of oils.

Just to be clear, most of the cholesterol in our bodies is produced by the liver, not consumed in diet -- so if you want to lower cholesterol, make sure you are thinking about that part, too.

There are multiple things that can help in increasing HDL, decreasing triglycerides, etc, and avoiding sugar can play a significant part in that.

I just use a non-stick frying pan so I don’t need to use oil or butter.

Get an oil sprayer. Also use an air fryer.

I'm surprised your doctor didn't educate you on this. That's really concerning if they didn't.
You need to learn about saturated fat (and cholesterol) in foods and what that means for you. As others said, plenty of "normal" cooking oils don't pose a danger to you. Misinformation does.

I’ve been on two sides of the low fat / high fat spectrum. I had high cholesterol 270 and decided to go plant based and my cholesterol dropped to 145 in a few months being low fat... sadly i didn’t have balance and went to low fat, and it affected my brain health as your brain is 70 percent fat. It was also really hard to eat out, as every meal is cooked in oil, and it would upset my stomach every time.... that really sucked as I enjoy eating out socially. Now, I’ve switched to a higher healthy fat plant based lifestyle and my cholesterol is still 145/150 and my brain is happy! Go figure
But I can eat out occasionally no problem now, and all my meals keep me full with healthy fats.

This. Those oils are good fats and fine to use. Just make sure if you are cooking with them, that you are using appropriate temperature for that oil. If you burn or smoke oil is isn't good for you. You want to limit animal fats, especially red and processed meats.

Don't go too crazy with it. Fat is essential for your body to function properly! Make sure to get at least 40g a day.

I cook quite a bit and need to sauté an onion or Mirepoix for many dishes. In order to cut back on oil I put about 1/2C water in the pan and simmer the veggies until water is dissolved, then I add a tbsp of oil, coat the veggies and lightly brown. It allows me to reduce the oil but still get a nice browned Mirepoix for my dish.

One hack I've learned is to use broth instead. I typically use oil as the base for everything, but I have found it effective when sautéing onions/garlic/veggies as a base.
