I make this except with Trader Joe's breaded chicken breasts at least once a week.

This! One jar of salsa and 2-4 chicken breast in the crock pot. Down! Use it for tacos, tostadas, quesadillas, or just serve with some rice. This is my easiest dinner for when I just can’t cook. Everyone loves it. Trader Joe’s salsa authentica works the best. It’s a very simple salsa with no other random vegetables (or fruit!) in there. This makes it a good blank slate for people to customize as they like


How long do you cook it in the crockpot?

We do something similar. In a slow cooker, one jar marinara, one jar Alfredo, nestle in 3-4 chicken breasts. On low for 3 hours. Shredded and return to sauce while you make the pasta of your choice. Excellent leftovers (if there are any!).

But sheet pan dinners are also the way to go. Search the internet for lots of good combinations (of things that cook at the same time/temp). Foil lined and there’s literally no cleanup.

Tacos made with Instant Pot mexican shredded chicken (I make with boneless chicken thighs)

Green salads w/ rotisserie chicken. I add toppings my kids like - diced apples, cucumbers, cherry tomatoes and serve with a baguette from the grocery store.

Air-fryer salmon. I buy fresh salmon filets, top with only salt & pepper and use the broil function, then let it rest for 10 min. It's amazingly good for something so simple and the air fryer cleanup is simple. I serve with rice and broccoli.

Air-fryer skin-on split chicken breasts - same approach where I only add salt & pepper but if you're feeling ambitious you could add chopped rosemary or thyme under the skin. I use the "bake" setting on the air fryer at 325 for about 20-25 min. The skin gets crispy and the flavor is so much better than skinless, boneless chicken breasts. Usually each breast is huge so 2 will feed the 4 of us; I cut each breast in half with a chef's knife before cooking. Serve with baked potatoes and a salad or veggie.

Meatballs...I use a recipe from Cook's Illustrated that is very good. Once you've made them a few times they are fast and easy. We bake them while the spaghetti cooks then add them to the pasta sauce. If you're feeling fancy serve with garlic bread and a salad.

I make an instapot quinoa khichdi. Basically, I have hacked this basic recipe https://www.cookwithmanali.com/instant-pot-quinoa-khichdi/ and I add a lot more veggies (including spinach, pumpkin and broccoli) and really dial up the spices and herbs in it.

I serve with a protein-rich and probiotic-rich raita - (kefir, cottage cheese, yogurt, milk, shredded beets, shredded cucumber, roasted cumin powder, paprika, black salt, roasted powdered flaxseed). Everything comes together very fast.

It is a cure-all for all kinds of ailments.

Southwest Chicken Salad - just bare chicken pieces or strips cooked in the oven, bag of salad or chop lettuce, throw in diced tomatoes from a can, black olives, avocados, mix ranch dressing with salsa, throw on tortilla strips or pepitos .

Cacio de Pepe with chicken. Use rotisserie chicken etc, cook pasta, drain, mix in butter, heavy cream, salt, pepper ( lots of black pepper) and cream.

Bulgogi rice - cook ground beef, drain, microwave fresh or frozen broccoli, microwave or instapot sushi or jasmine rice, mix cooked ground beef, broccoli and rice together with bulgogi sauce.

Grilled sandwiches. Ham,Swiss or Gouda, mustard mixed with mayo and tomato,

100% agree. PP's list was nuts. Pathetic attempt at humble-bragging what "their" idea of insanely easy is. I guess they do pheasant under glass when they are feeling really energetic. :-/

Get a turkey kielbasa you can put under broiler till crisp, a box of frozen pierogi (they come in different flavors like potato & cheese) sauteed in a pan with butter till brown, and some frozen peas. Done!
