Or sources. I need to get out of our dinner rut, but I really hate cooking. My family hates my cooking too. So I don’t want to chop and stir and simmer and anything hard. I’m talking easy like:
Baked chicken thighs, boxed rice, roasted broccoli. Quesadilla, cherry tomatoes, whatever fruit isn’t moldy. What are your go to meals that are really, really not hard? I need to expand our proteins and get some new vegetables in there. To be clear, my kids won’t eat the vegetables. This is just for me to feel like I tried. |

This is where some of those TikTok recipes come in handy. Tomato feta pasta (halve cherry tomatoes, add garlic, toss in a baking dish surrounding a block of feta, drizzle olive oil over everything, bake, boil pasta and dump it in and stir ). Rice cooker chicken and rice - rice in the bottom of the rice cooker, toss ginger, garlic, white pepper, scallions over, put chicken thighs on top (marinate in soy sauce, garlic, ginger ahead of time if you’re ambitious) cover in chicken stock and soy sauce, hit the cook button. Sheet pan dinners.
These take some time, but not with you at the stove, prep in under 10 minutes and just bake. Also, roast vegetables in the air fryer. |

Make ramen. Add rotisserie chicken. We add celery and carrots to ours. You could do that, or broccoli.
Black bean nachos. Chips on oven safe plate. Canned beans, shredded cheese. Broil 2-3 mins. Avacado and tomatoes on the side. |

Naan pizzas—spread some pesto, add some prosciutto, mozzarella, and halved cherry tomatoes. Bake at 375 for about 15 minutes. A variation is to spread tomato paste straight from the tube, and some cooked sausage and peppers (leftover from a sausage and peppers tray bake—another super quick meal).

When I need to o quick I just got back to the old school protein, carb, and vegetable equation. I mix up the marinades or prep so it's not boring in terms of flavor, but the 3 item equation stays the same.
Example: Garlic marinated pork chops, yellow rice, roasted carrots and onions Baked cod with asparagus, cherry tomatoes, and yellow squash with lemon butter over couscous Grilled steak, garlic mashed potatoes, sautéed spinach/kale Stuffed chicken breasts (red pepper, cheese, spinach, whatever) salad, bread Shrimp scampi pasta with tomatoes and spinach, side salad Harissa chicken and potatoes sheet pan meal with herbs and yogurt sauce. Roasted broccolini Lamb chops, orzo with herb mix, roasted tomatoes and onions |

What is wrong with you? None of this is "insanely easy." Not OP, but when I want to make an easy dinner I'm sure as $h!t not stuffing chicken breasts. FFS. |
I make this in my oven in a dutch oven, so you don't even need a crock pot to make this. |
