I do think it’s user error for those who think it’s bland. Almost all recipes are lowest common denominator as written. I never follow any recipe to the letter — I just assume the “[spice] to taste” is implied. Anything calling for garlic should be at least doubled.

Ha - I didn't try that! I have been making the sheet pan chow mein from Smitten Kitchen on repeat, which sounds similar. It's fantastic, but we use totally different vegetables.
