What’s for dinner this week?

Op here, back planning for the upcoming week!

We are having black bean burritos one night and another I’ll marinate chicken thighs in Italian dressing and bake with peppers and onions and serve over mashed potatoes. Will
Probably do a crockpot salsa verde inspired by the crockpot thread. Shrimp, potatoes, green beans sheet pan dinner.

Teens are busy this week so I don’t know quite yet when they will actually be home for dinner. I’ll grab some Trader Joe’s mandarin chicken as a backup.

We have a LOT of leftovers!l We will probably eat some up for work lunches rather than try to stretch all across dinners, but I think we'll still be able to have:

1. Pulled pork, kimchi slaw, either sliders or tacos
2. Homemade max and cheese, possibly with any remaining pork and possibly with broccoli
3. Peruvian chicken with salad and roasted squash

I promised the kids homemade pizza. I try to do a bean dish every week and I'm thinking maybe Ethiopian lentil stew with crusty bread. Then...I don't have a plan for the remaining two days. Will put DH in charge of one.

So then we need some more veggie-focused meals.

Sunday night we're having a pork loin roast, which will leave leftovers for mixing into sandwiches or grain bowls for lunch the rest of the week.

Monday - DH out of town, getting pizza with the kids
Tuesday - salmon with rice and green beans
Wednesday - quick pho-style soup
Thursday - chicken curry with lots of vegetables, rice
Friday - breakfast for dinner, scrambled eggs with spinach and bell peppers, toast

Monday- French onion beans I got from a TikTok recipe, with a green veggie and crusty bread.
Tuesday - some kind of tofu with veggies and quinoa.
Wednesday - brisket, kugel, tsimmis, challah
Thursday - bagels, blintz soufflé, salads
Friday - leftovers
Saturday - take out

Mon--Meatloaf leftover from yesterday. DH likes to pan heat it and make a sandwich on toast. DD eats it with pesto pasta.
Tues--late night sports game, so concession stand. . .
Wed--Thai red curry with salmon and shrimp
Thursday--london broil--have to figure out how to prepare
Friday--leftovers.

I don't love the idea of buns, and it's hard to find slider buns anyway, but I could keep some in the freezer. I wouldn't eat the buns but my teens would prefer that method of delivery, with cheese and condiments of course. Also good as a snack.

I make black bean burgers that are a big hit. Use canned, not dry/ soaked. (For most things, it's the other way around, but mushier beans make better burgers)

You could also do different seasoning in your turkey burgers. I've done asian flair turkey burgers before, with soy sauce and sesame oil and chopped water chestnuts, in addition to the zucchini

Monday: Indian chickpeas, cauliflower, potatoes dish over rice
Tuesday: shrimp fried rice with lots of veggies
Wednesday: sports practices right over dinner so leftovers from the previous nights or sandwiches
Thursday: chicken fajitas
Friday: leftover chicken and toppings from the fajitas for nachos
Saturday: grilled chicken wings and whatever veggies from our Saturday CSA will grill
