What was that chicken chain on Rockville Pike and in Spring Valley? They used to have a chicken salad with apricots and sliced almonds. Yum!

I think you either like mayonnaise-based salads, or you don't. I like these "salads" (which are not actually salads), while my spouse doesn't like any of them. I personally like the Napa almond chicken salad at Panera.

Mayo, then thin it out a little with milk or half and half. I think most chicken salad mixes aren’t 100% mayo

I was taught to poach chicken for chicken salad. Never tried it with baked or rotisserie.

As a mayo-hater who does like fruit, how can we create a german-style (like potato salad) but for chicken? And make it not disgusting? Then add cranberries?


Easy. You can make chicken salad with evoo/vinegar, italian dressing, soy sauce, mustard, whatever! I personally like a 1:1 mix of mayo and dijon mustard but you could sub in evoo for the mayo.

Ok. Are all you chicken salad enthusiasts really old? B.c I don't know anyone who poaches anything other than eggs. It seems like it went out in the 60s. At least sous vide, people!

My best chicken salad recipe

-boneless chicken breasts in Instant Pot- rec searing on Saute if using fresh chicken
- add chicken broth to about 1/3rd of the depth
- add: garlic, cumin, oregano, ancho, red pepper flakes, chopped onions, cayenne pepper, salt
-manual for 12 mins - 16 if frozen
- shred and serve on warm tortillas with fresh cilantro and a wedge of lime

I rarely have mayonnaise in the house to make chicken salad. So, I use hummus and yogurt. It doesn't taste the same but it's on the healthier side. I add many other things like nuts, cranberries, raisins, peas.
