My favorite twist is to add some finely chopped chipotle in adobo.

Dice up leftover chicken, celery, fresh chopped parsley and/or dill.

Dressing is mostly plain yogurt with a tiny bit of Mayo and djon mustard and a splash of half and half whisked smooth, add salt and pepper.

-if I’m doing curried chicken salad, I add curry power and golden raisins. If not, I omit the curry and add grapes or dried cherries

Sometimes I put on a bed of spinach or arugula, sometimes on a fresh croissant.

Chicken salad originated in the South and was first popularized on a restaurant menu in Rhode Island. Also, 500 quarts of chicken salad were on the menu for James Buchanan’s Inaugural Ball.

Please never serve that to guests you don't know well. I'm one of the chicken salad haters. I could choke down some of the versions to be polite but all the fruit esp dried fruit is just beyond disgusting.

100% this. I love it how snobs on here say they detest some fairly common food and sneer at entire regions of the country, and then likely go on to eat some other food that day that others on here would never put in their mouth because it was too “disgusting” or “unhealthy” or “retro” or what have you.

What are you talking about? I don’t think I’ve ever had chicken salad, in any state, in any establishment that didn’t contain some variation of fruit. Be it raises, grapes, cranberries, dried cherries, etc. Perhaps the only time I don’t see this is maybe in premade gas station sandwiches

I bake boneless/skinless chicken breasts seasoned with salt, pepper, and a little paprika. Dark meat should never be in chicken salad. Cut into tiny pieces. Add Mayo (Dukes) salt and pepper. That’s all you need for really good chicken salad. Don’t use a greasy store bought rotisserie.

Sometimes I add grapes and pecans. Sometimes I add a curry. You could also use apples or mandarin oranges.
