Why so nasty? She was just answering the question a PP had asked her. OP I sympathize, I don't like veggies much either. I do eat a lot of fruit though, which I hope helps. I have also found that I like vegetable soups better than most other vegetable preparations. Just steam the veggies or roast or saute them with some olive oil and onions, add them to soup stock and blend. I use a hand blender and blend in the pot. Super easy, fast, and relatively tasty -- to me anyway. You can do this with carrots, squash, broccoli, peas. I also add spinach to egg drop soup. Check out Mark Bittman's "How to cook everything" soup chapter, that's where I get most of my ideas. |

My husband & inlaws didn't like veggies either. They grew up eating canned or overly cooked vegetables. They come from a tropical island, where it can be difficult and expensive to grow or buy fresh vegetables.
Whenever I serve grilled, blanched or oven roast vegetables, everyone raves. A little sea salt (not Mortons) and olive oil, grill or roast on high heat. Blanche green beans varieties and asparagas to keep them from overcooking. |
This is PP-- I first read her response that she was blaming her parents for her dislike of veggies--but that might been the PP's DH. My apologies if I sounded "nasty". Still, I think eating veggies is part of being an adult. I used to dislike most veggies as a kid. I read that your taste buds mellow out and you can handle more bitter tastes. Now, I crave veggies. I would agree with you re veggie soups. Also roasting veggies is a good way to bring out the sweetness in ceggies. |

I was forced to eat frozen and canned vegetables as a child and I hated them. I was made to sit at the table until I ate them. I was very creative about not eating them (feeding them to the dog, spitting them out in the toilet, etc). We never ate raw vegetables but as I got older, I discovered that I liked them. Now, I will eat salads and eat them with dips, etc. My son hates all vegetables except corn on the cob but I don't force him. I just ask him to try a bite or two. I also take a multivitamin b/c I don't eat anywhere near the recommended amount daily. I might eat that amount in a week, not a day.

| Try exposing Yourself more to them. I developed a taste for veggies, sautéed spinach etc after working in a restaurant- I saw it all the time on plates. Eventually I started eating my shifT meal with spinach instead of fries, eventually I started liking it. Just keep trying them over and over. Eventually you will like them. |

OP, I'm also curious what your typical food intake looks like. My advice would be different if you're more of a "salmon with a side of farro" person than "Big Mac, hold the lettuce" type.
Generally, though, I'd only suggest that you try to keep an open mind and try new things. Vegetables are a huge category of food and there are a ton of options. See if you can define specifically what you dislike: - Certain textures? Crunchy (raw veggie, salad), soft (steamed), mushy (roasted eggplant)? - Some people dislike bitter vegetables, other people hate sweeter vegetables with a passion (corn, sweet potatoes). If you can figure out which flavors are particularly offensive, we might be able to come up with some suggestions. What about things like marinara sauce on spaghetti? Or shredded vegetables mixed into meatballs? Banana bread / zucchini bread / pumpkin bread? |
| I'm not a big fan of vegetables either. Not something I'm ever going to crave. But, I know I should eat them and serve them to my kids so I do so. I like them best as soups (I have some kind of vegetable-heavy soup for lunch every day) or roasted. Just about any vegetable is better when roasted and properly salted. |
