First I've heard of this - most studies are consistent on this. More Raw Plants in your diet the healthier you are.

I make a lot of burritos with eggs, beans, veggies
Swap your bread for Ezekiel bread
Make tofu or chickpea salad for sandwiches

Maybe OP is from a culture where protein is limited, then she does need to pay attention to protein intake!

Excess anything is bad for you.
Also, most of those "studies" are with people who barely eat anything healthy at all, so of course adding some vegetables to their diet will improve their health 100% of the time.

However that doesn't mean a 100% plant based diet is healthy either. Read more, learn more.

I love paneer. Moms organic market sells a nice brand. Its so much better than tofu. I cut it in cubes, like 3/4 inch, and warm it up in a sauce and pour over rice.

I do a curry dish with fried garlic, add about 3/4 tablespoon of Badia curry in pan in oil a minute, add about 3/4 can of coconut, and can tomato paste, simmer 15 minutes, add paneer few minutes. Serve over rice. TJs sells a lot of sauces in jars. Its probably good cold too in salads.

You can also do spaghetti fritatta. Its adding a bunch of eggs and some cheese to spaghetti, bake, then slice like pie.

Special K loaf. Theres lots of variations online. Its basically a 10 ounce box of special K cereal, 1.5 lbs of cottage cheese, fry 3/4 onion, 1 cup of ground unsalted pecans in blender, 4 eggs. bake in a casserole 45 minutes at 350 degrees. adding 1 tablespoon of Braggs liquid amino acids makes more flavorful too.

I have been vegetarian for 34 years and have kept my weight on target. I eat some form of soy every day . Lots of crunchy raw veggies throughout the day. Peanut butter. Greek yogurt and kefir. Regular old cows milk in coffee and cereal. Lots of fruit. Some beans. Basically anything but meat.

These arent really my ideas. I did not invent fritatta, or paneer in curry sauce, or the loaf. Never been to an indian restaurant? Special K loaf might sound odd to you, but it's a thing. Theres likely 25+ recipe variations on the internet.
