This sounds awesome!

Our kids loved the Spruce Point Inn in Maine. Not cheap but also not "fancy." They loved being free to roam.

Oooo nice!!

Truly, google “George Washington hotel Winchester” and look at the pool 😂 there is like a Greek statue, and white columns. My kids minds were BLOWN.

But they also like staying at any hotel with a breakfast buffet, Hampton Inn is their first choice. So.

The Hershey Lodge was a lot of fun and cheaper than the Hershey Hotel (or is it Hotel Hershey).

Is the pool warm? I’m thinking this could be a good winter trip

Rocking Horse Ranch in NY

Nemacolin

Grand Hyatt Tampa Bay
Drury Inn Disney Springs

Both are budget options under $300 and had nice pools and a good breakfast. The Hyatt has a little beach and nature walk that is nice. At the Drury, we got a room with a view of the Disney fireworks. They loved that.

We also loved it, and it had a good balance of stuff to do nearby (with a rental car).

royalton riviera maya (we went right after it opened and it seemed "fancy" to my kids).

a ranch/ecolodge in costa rica that was not at all expensive, fairly rustic, but really sweet and homey called finca queveri. We had locally sourced, home cooked meals, saw a baby calf hours after birth, went on horseback rides, went to hot springs, and hung out.

I realize this is technically an AirBNB, but it's part of a little complex and works more like a hotel. We have stayed all over the world in all types of accommodations, hands-down this was DS' favorite - https://www.airbnb.com/rooms/15985621?source_impression_id=p3_1724794963_P3_GFlBTh_H-_V31

Great Wolf Lodge near Williamsburg. Heated indoor pool setup. Kids loved it. Pierce's BBQ is nearby, affordable, and great food.

Hawk’s Cay. In the Keys

My info is dated but DD loved the dolphins and making her own pizza in the kitchen. There were multiple pools!
