What's on the Menu: Week 2

And if those with limited time in the evening want to share hints, I think it will be appreciated:

My plan:

Spinach pie: will do on the weekend because it takes time
chicken cutlets w/ spatzle and vegtables: weekend
stuffed peppers: prep on weekend and put in fridge or freezer for later in the week
tofu stir fry w rice in rice cooker: sometimes I prep the vegetables in the morning
omelet with vegetables, toast on the side: again, if I think evening is going to be crazy, I try to chop the veggies in the morning or night before
split pea soup/ bread from bakery: slow cooker

Beef hard-shelled tacos with refried beans and rice

Chicken and farfalle salad with walnut pesto

Looking for one more that could last two nights...

--Chicken enchiladas with black beans (using leftover roast chicken, weekend meal because we're using dried beans so they take a while, could use canned beans to speed it up)
--pork and sauerkraut (crockpot) and I'll quickly boil some potatoes for mashed potatoes when I get home from work)
--tomato and chickpea soup with elbow macaroni (we make the soup base the night before and then just need to heat it up and cook the pasta the night we eat it)
--black bean soup (using the black beans cooked earlier in the week)

DH has 2 after work events thus week, so those nights DD and I will have leftovers or Mac and cheese. That gets us to the weekend when we'll do takeout or have just gone grocery shopping.

Ground turkey, peppers, onions in a marinara sauce served over zucchini topped with mozzarella and parmesan cheese

Sautéed Sausage, red, yellow, orange bell peppers, zucchini, and potatoes in olive oil

Corn and crab cakes with a side of something

Pesto shrimp with whole wheat pasta

All I know for now is what I'm making today. Crock pot chicken taco soup.

Found a recipe somewhere online. Looked easy and I'll be adding a little bit to it. chicken broth, water, rotel tomatoes, taco seasoning, cumin, chili powder, garlic, chicken. I'll be adding in some southwest corn mixture I saw in the freezer section. Might add beans if I have some.

We get Hello Fresh for 3 meals and this week will supplement with:
Brussels sprouts side dish
Broccoli side dish
Grilled chicken with quinoa and veggie. Chicken will get whatever marinade or sauce I have in the fridge. Salsa and cheese in a pinch.
Caesar salads with leftover chicken
Salmon from trader joes and grain/pilaf and green salads.

Also a big bowl of citrus salad to eat all week. Cara cara oranges, blood oranges, grapefruit, etc all peeled and chopped into bite size pieces.

Some kind of pasta (probably pasta with pesto and sautéed veg)

Some kind of quesadilla (either black bean with corn or black bean with plantains) and guacamole

Friday or Saturday-- try to get somewhere for Restaurant Week!

How do you make your venison stew? I have a bunch of venison that my brother gave me, and I have no idea what to do with it.

Crock pot beef stew-- the "three packet" crock pot recipe that's all over the internet.
(That's all I have so far... it will be good for two nights this week, need to figure something else out.)

Not sure which days are which yet (and only have four, going way on Friday)

- Black beans and rice and corn.
- Ham, Baked Potato and roasted veggies
- Chicken nuggets and salad (got to throw one of my son's fav's in)
- Pineapple chicken stirfry and dumplings.

Man, mine are so boring compared to others. I need to get an enchilada recipe. That sounds good!

W: chicken with mushrooms and white wine sauce (Mayo Clinic dash diet recipe) and a tossed green salad
