Stratas are good because you assemble the night before and bake in the morning.

Baked eggs in a mix of pasta sauce and salsa on polenta: http://glutenfreegoddess.blogspot.com/2008/01/huevos-diablo-on-soft-polenta.html Have used pre-made polenta, which worked well also. You can easily increase or decrease the heat. Delish! |

6 eggs and add a bit of milk and salt and pepper and mix with fork in mixing bowl. turn grill on in a (heavy deep) pan, add a bit of butter, chopped shallots and asparagus in and cook for 3 minutes. Then cover with egg mix. chop parsley once cooked in bottom (4 mins on medium heat), put parsley on top - a generous amount! Plus crumble some goats cheese on top - if you wish and under the grill for another 3/4 mins. serve with salad (rocket and mixed leaf) and a simple vinaigrette. can squeeze a bit of lemon juice over frittata. simple and very nice! |

Chop a small head of broccoli florets (or use frozen) and 1 red bell pepper. Sautée in lots of melted butter with s&p and a bit of garlic powder.
Beat a dozen eggs and beat in 1 cup cream or milk. Mix in sauteed veggies. Add a cup if shredded sharp cheddar. Butter/grease a 13x9 pan. Pour the egg/veg/cheeae mixture in. Bake at 375 for 30 minutes or until toothpick comes out clean and top is nicely browned. |
