What is your dinner menu this week?

Tonight - Bone-in pork chops, baked potatoes, spinach
Monday - Balsamic boneless, skinless chicken breast, short grain brown rice, kale salad (Taylor Farms mix)
Tuesday - Quesadillas on cashew tortillas, arugula salad, guacamole, black beans
Wednesday - Whole wheat angel hair pasta with ground turkey in a spicy red sauce, arugula caesar salad
Thursday - Toasted cashew tortillas topped with egg and pimento cheese, with a big salad.
Friday - Praying for some leftovers for some sort of smorgasbord. Hahaha.
Saturday - Either out or burger/no bun, topped with avocado, season potato puffs (these are addictive, and I'm not a huge fan of tater tot things) with another kale salad (Taylor Farms--addicted to these as well.)
Rinse-repeat. Hahaha.
Reading through all of these because I need ideas too!

The other days that I don’t cook I will pick up some prepared food from wegmans.

What in rainbow pizza? I really hope it is not a typo, because I really want to live in a world with something called rainbow pizza!

It’s so good! It’s a veggie pizza. I use a store bought uncooked pizza dough. Spread it onto a pan. Top with ricotta cheese. Toss the following veggies in olive oil: broccoli florets, red and green peppers, red onion and shredded (matchstick) carrots. Dump the veggies on top of the pizza. Bake it based on the cooking instructions on the pizza crust. I like to sprinkle some red pepper flakes on the ricotta to give it a spicy taste. You could also add some mozzarella cheese, but I usually just use ricotta.

Monday - sports night, so need a 15-minute dinner when getting home from work. Sausage tortellini with salad.

Tuesday - I'm out at a work dinner. DH in charge. Probably out for sushi.

Wednesday - Chicken tikka masala in the Instant Pot. Side of naan (store bought) and peas.

Thursday - DH work dinner. Haven't decided yet. Maybe grilled cheese with sliced vegetables and ranch dip. Or out for sushi if they didn't do that on Tuesday.

Friday - finally. What a week. Salmon fillets that I'll pull out of the freezer Thursday night. Probably just pan-seared and finished in the oven, with roasted broccoli and rolls. And salad.
