Can of chickpeas drained and dried (need to be dried well) tossed with olive oil and spices or chopped fresh herbs (I love curry powder or rosemary) salt and pepper. On a baking sheet in a 450 degree oven for 15 minutes. Crispy on the outside and softer in the middle. My 4 and 9 year old dds love them too.

Not the OP, but I'm gonna try this!

NP here. We love them roasted with paprika, coarse salt, pepper, and olive oil. Yum.

I believe the hearts of palm are loaded with oil, so very fattening, unless you are buying a kind I've never seen . . .

I'm glad someone mentioned jicama. I ate that a lot while growing up as a snack and a low calorie food while growing up out west. Strange that you rarely see it here. I'm going to try and get some tomorrow.

Maybe you're thinking of artichoke hearts, but all the Hearts of Palm I've ever purchased have not been in oil - they're very low in calorie. Believe me, I'd be obese by now if they weren't and I am not.

That was my favorite snack when I was a kid. It's so refreshing on a hot summer day.
