Forgot about Manchego cheese!
Fresh mozzerella (especially w/ fresh summer tomato & Basil.)
I posted earlier but neglected to mention these 2.
"Favorite cheese" for me is also very much dependent on the pairing

Cheddar....apple slices or grilled cheese or on a burger.
Gorgonzola...beet/apple ot pear and arugula salad w/ candied walnuts.
Gruyere...fondue.
Monchego...w/ grapes or ham. (Preferably in Spain!
Jarlsberg...w/ fig jam & crackers.
Provolone.....w/ prociutto on a baguette ot turkey sandwich.
Greek salads w/ feta

That stuff that comes in a spray can. It's delicious on Ritz crackers. Now they have a bunch of different flavors, I love the buffalo flavor <3

Halloumi. Grilled, of course.

And anything from Cowgirl Creamery, especially Inverness which looks like a little ball of mold but tastes exquisite.

The manchego thing just doesn't do it for me. Not into the hard cheeses.
