What do you keep on hand in pantry for quick dinners when there is little in the fridge

my goto about once every other week is penne pasta With either…
- Jars of marinara sauce and I have frozen meatballs or pre-cooked ground turkey/beef/sausage on hand.
- A jar of pesto
- Cream and Parmesan to make Alfredo sauce and frozen broccoli and shrimp

Op: didn’t poo-poo, I just always have frozen sauce or passata in my pantry. It makes me think of my deceased Italian grandmother who made passata once a year in the garage with her sisters. Rao’s seems to be decent sauce, but there is generational guilt at work, here. Ramen is a good idea for kids, maybe with peanut butter and soy sauce….They love pho…I wonder if if I can get pho noodles at Hmart…

Yes - you can get them anywhere in the Asian food section. Whole Foods has them. They also have momofuku ramen wi the spicy soy. Trader Joe’s has a version too. We make our own with frozen ginger, garlic, coconut aminos, and chili paste. Soooo yummy.

Canned San Marzano tomatoes, chicken stock.

In addition to the Marcella Hazan marinara, I make an awesome soup with San MarzNo tomatoes. I sauté garlic and onion in butter, then add tomatoes, salt and pepper, chicken stock. Simmer for half an hour, add fresh basil from the garden, then blend with an immersion blender. Serve with frozen garlic bread or a grilled cheese. My son likes this so much he asks for it as his special birthday dinner every year. And it is healthy, especially if you add a salad.

I consider butter, onions and garlic to be pantry staples, I always have them on hand.

I also keep frozen potstickers around, and many different Asian condiments to make a dipping sauce.

Black beans and rice is easy and healthy. I also keep several kinds of dried beans around, as well as cornmeal for cornbread. That is simple on a day I have time to summer, but doing want to go to the store.

I rely heavily on my chest freezer - by far the best covid purchase I made.

Portioned frozen leftovers -chili, curries (thai, Indian, Malaysian), pasta sauces (bolognese, marinara), weinerschnitzel, karaage, katsu, extra chicken pot pies, empanadas, Korean dumplings

Uncooked and ready to thaw and cook - marinated bulgogi, usda prime steak from costco, hamburger patties, coho salmon filets, marinated short ribs, chicken soup

Starches - udon noodles, bread, leftover rice, puff pastry, hash browns

Store-bought - Costco lasagne, TJ meals (my kids like the Indian ones), Kevin’s meals, Costco mango chicken curry, frozen dumplings and bao buns from Asian supermarket

Veggies - riced cauliflower, ginger and garlic from TJ, edamame, spinach, corn, peas, butternut squash

Pantry - coconut milk, chicken broth, crushed marzano tomatoes, pasta, rice, curry pastes, quinoa, couscous, powdered whole milk, many types of Asian noodles - ramen, soba, sweet potato, rice, mung bean, canned beans, chickpeas, corn

Chickpeas + coconut milk + red curry paste. Obviously it’s better with veggies but if you really need a strictly pantry meal, this + rice is delicious

lentil soup

Pasta fagioli soup

tomato risotto (canned cherry tomatoes, stock, Arborio or carnaroli, frozen basil cube and parmigiana

Tuna in olive oil for salads, sandwiches, a quick pasta

Pasta aglio e olio

Other scraping the dregs of the fridge ideas: eggs on toast, frittata, carbonara (usually have pancetta in the freezer), grilled cheese, cheese & meat display, bean and cheese quesadillas…

These are great! Really what the thread is about. But... canned cherry tomatoes? Is that a thing? Is just diced OK?
