Be happy that you get to share a cultural dish with them. I'm guessing their skeptical abd probably stubborn to try something "foreign" abd unfamiliar.
Go easy on the spice (mild is best) and on the smell (easy on the garlic, by its own nature its overwhelming ). Present it on a nice platter. But cheap chopsticks, too, to keep it lighthearted (makes for a good laugh and conversation). |

Send out a feeler. Ask her what proteins or veggies they like or hate, and if they prefer saucy or dry.

It's about getting lots of very hot surface area to fry the rice on so all the rice has contact with the frying surface--hibachi places use a flat top, and chinese restaurants use a large wok. When you make it at home, the best thing you can do is fry the rice in smallish batches so it all gets contact with your frying pan. |
It isn't this, it's the cooking technique. Restaurants use a super hot flat top or super hot large wok, and the rice gets a lot of contact with a hot surface so it gets a better taste and texture. Also, making fried rice with rice that was cooked the day before, or cooked earlier that day and allowed to sit helps too. Rice that is too fresh will be too sticky or have the wrong texture. |
