Restaurants use a super hot flat top or super hot large wok, and the rice gets a lot of contact with a hot surface so it gets a better taste and texture. Also, making fried rice with rice that was cooked the day before, or cooked earlier that day and allowed to sit helps too. Rice that is too fresh will be too sticky or have the wrong texture.
