How to make green beans yummy?

I love green beans, but I'm picky about the degree of doneness. I like mine still bright green, but soft to chew. Hate them when they are still hard!

I usually cook to the way I want, then drain and toss in olive oil and sauteed garlic.

Also, olive oil, dijon mustard, cooked and crumbled bacon.

I also dislike green beans that are too hard/undercooked. Tonight I boiled them for about 5 minutes (kept testing until it was the right softness but not mushy). Then I put them in an ice bath and sauteed some shallots in butter (in the now empty pot).

I patted the green beans dry and added them back into the pot with the shallots/butter. Added salt and pepper and a squeeze of lemon. My family ate them up.

My family loves green beans but god forbid I add flavor to them. Butter and salt all the way.

My kid will eat them in pesto sauce (we made the pasta from Luca which has pasta, potatoes and green beans all cooked in the same pot then tossed in pesto. Green beans you had last for 3-4 minutes.)

+2. I'm not really into them and neither is DH. We're both pretty adventurous eaters and can eat them to be polite, but I don't buy them.

So many ways!

sauteed with olive oil and baby carrots on a medium heat so they blister and then add salt and dill

finely chop and make an omelet with onion and parmesan cheese

parboiled in potato salad with lemon juice, sour cream and dill

part of a stir fry

Sautee in butter/olive oil with salt/pepper. Add minced garlic and lemon zest and cook for the last minute. I then make a sauce that's mayo, horseradish, lemon juice and salt.

Blanch them, then flash fry in a little oil and garlic, top with parmesan and a squeeze of lemon

dp.. me, too, but the kids don't mind it, and I want them to eat vegetables, so I tolerate it. We're having them tonight. DH is cooking. I guess I really can't complain too much.

I like sauteeing green beans (frozen or fresh work equally well) with olive oil, diced fresh garlic, salt and pepper, and then adding a small can of diced tomatoes. This is always a crowd-pleaser at our family Thanksgiving.

OP here. Thanks to everyone for the tips! We are a (mostly) vegetarian household so anything with bacon is out, but I appreciate the suggestions.

I'm intrigued by this post. Can you saute frozen green beans straight from the freezer? Not sure how I didn't know this.

Teens swear by these. I even make them to team potlucks and meals:

Fresh green beans, steamed with fresh garlic. Then add soy sauce and brown sugar.

Easy and delicious.
