How to make green beans yummy?

I like the greek style green beans— overcooked, lots of olive oil, maybe dome tomato. Im not greek, so im not sure how they make them. I either like green beans raw or cooked really well. I dont like the sweet burnt taste of roasted veggies.

Green beans cooked crisp-tender with butter, slivered almonds, and salt
Overcooked Mediterranean-style beans with olive oil, tomatoes, onions, garlic, herbs etc
Green beans cooked with some kind of pork-fatback, bacon, ham hock, etc

Basically, don’t be afraid of salt and fat. Those make a big difference!

Cook with onions, garlic, and a ham hock or other smoked meat.

Blanch whole fresh green beans to make it tender but with a snap. Then saute the beans with sliced garlic. Add a glaze of soy sauce and honey, just enough to coat the beans. Check and adjust the salt. Add sliced roasted almonds. Toss, serve.

Both my daughter and I REALLY dislike green beans that are still at all crisp. There is a weird waxy feel on the teeth or something. But we LOVE overcooked or mushy green beans...often stewed with tomatoes.

The worst is whole green beans that are still a bit crisp. If you are going to do them with still some bite, cut into smaller pieces.

(Obviously individual preferences vary.)

get a cast itron skillet hot (I've done this on a grill or on stovetop, just wherever you are cooking your main). put a few tbsp oil in (I use olive oil, as long as you put it in with the beans) and blister them for around 10 minutes (stir, flip occasionally). When blistered and tender, remove from heat. Add about 2-3 tbsp butter. Some kosher salt. 1-2 tbsp vinegar (I go sometimes for a white wine vinegar, sometimes for rice vinegar). Throw on tsp-tbsp of tarragon. Serve. They're so delicious. I got this from a recipe but can't find it to link to. This is what I've been alternating with steamed.

Melt a couple of tablespoons of butter and stir in an equal amount (or a little more) of maple syrup. Let them start to bubble together, stirring, and stir in almond slivers. Stir the almonds in the mixture over low-med heat until the butter-syrup mixture is a little thickened and starts to coat the almonds.

Blanch or steam green beans and toss with the warm almond-syrup-butter mixture.
