Easy dinners in bulk: college edition

They will not bother with any of this, mom. They will quickly realize how much beer they can get vs. steak and will largely subsist on Ramen noodles, Easy Mac, pizza, cheap fast food, and whatever their friends who work at restaurants will bring them.

Oh can it. There's nothing wrong with a parent seeking some peer guidance to help out their child. It's not like OP is offering to cook all of her son's meals or anything.

Yes it is. They're "20-somethings." Seriously, they can figure this out.

Thanks for your input. It's really helpful. I hope to be able to return the favor one day.

I suggest your DS use his library card and the Net for tips.

Giant, safeway, or Harris teeter. Super easy.

Rotisserie chicken? That is even easier. I was thinking chicken roasted with veggies in the oven.

What does the GF do/have that can't be done in a skillet on a stove?

My college daughter could live like this but my son won't eat this stuff and eats healthy proteins and carbs at every meal. I'm sure he likes beer too.

Actually, UTube has some great how to videos on cooking. DC might want to check them out!

My son is also very into proteins and works out like a fiend. He eats a lot of eggs, skinless chicken breasts on the grill and makes those whey protein shakes.

My son is the same. How does he grill the chicken? Even I don't have a foolproof way to keep chicken moist. DS says his chicken on outdoor gas grill is tough but edible.

Bake chicken breasts in the oven wrapped with foil with some kind of vinaigrette, salsa, etc. Not fine dining, but lean protein that isn't too dry.

I've done this with fish. Now I'll try it with chicken.

Yes, the chicken breasts on the grill can get tough. One trick is to marinate them for a couple of hours in bottled italian dressing. This helps them not dry out as much. Grilling breasts with the bones and skin is another option. It's a little more work to cook them on the grill but they dry out a lot less.

My son also buys the pre-packaged pulled BBQ pork and chicken. You just microwave and put it on a bun. Not the most economical, but for one person it's okay and very easy. We like Jack Daniels' brand (available at Target).

Boneless skinless Chicken thighs in Soy Vey marinade--with brown rice.

I'd get a cuisinart griddler or something else with removable plates instead of a George Foreman grill.

I don't understand the recs for a hot plate/grill appliance. What's it do better than a skillet on the stovetop?
