It is a small and delicious bird and cooks very fast. Very easy meal and presentation is impressive and wonderful.
Try it. Foolproof recipe.

One adult with a big appetite can easily eat one bird but we usually split two birds between 2 adults and 2 kids, with other sides and starch.

Another white bean soup, with ham here, served with crusty bread.

Sautee onions, carrots, celery. Add chicken broth and several cans of drained, rinsed, Great Northern Beans. Use immersion blender to get to a thickness you want. Add ham (I use a honey baked ham bone), and some white pepper. Simmer. Cut ham off the bone, dice it into bite size piecee. Delicious!

We had Cornish hens last week, my teenage son and husband will eat a whole one, 8 eat a half. Super easy and moist meat

Healthier Zuppa Tuscana in the instant pot. I just use ground sausage or ground turkey, potatoes, broth, kale.
