Weird things to put in sushi

Anonymous
Ooh, this sounds like fun!

Crunchy vegetables - cucumber, thinly sliced radishes, asparagus (use a vegetable peeler to get thin slices, or roast and put them in whole), alfalfa sprouts, shaved or shredded beets, shredded carrots

Proteins - avocado, edamame, scrambled egg, and I think really thinly sliced steak would work. Maybe cooked ground pork, or slices of roast pork belly in some kind of teriyaki glaze?

Other fun stuff, pick one or two to mix with a protein and/or vegetable - pineapple, shredded Asian pears, green onion / scallions, pickled ginger. I'm looking at poke bowls for flavor inspiration.

Thank you, kgimbap posters! I feel so ignorant but this is exactly what I was looking for.

Lunch poster I promise after I make the sushi I’ll just throw it out and pack fruit roll ups, okay? I promise! You can go back to sleep.

Oooo, I love the idea of ground pork. I think that’s going to work and I never use that ingredient. Thank you!!

What are some non-raw things you think go with sushi rice and nori?

I think the champion is clearly avocado. I’m also thinking egg, cucumber, that sort of thing.

I can’t seem to make chicken work. It’s always weird. But maybe steak? Bacon? Is that too weird?

Koreans have a version of rolls called ggim bap. Look it up - we put in carrots, egg, a type of pickled radish, tofu, seasoned beef, spinach, etc. It’s more savory than sushi rolls and meant to be eaten as is - not dipped in anything. It’s traditional picnic food!

Oops, I didn’t read all the other ggim-bap replies! Enjoy! I do put chicken in mine, by the way - I put in a chopped version of Japanese karaage

I think roasted or air fried extra firm tofu would be good (I have one that I make where you put barbecue seasoning and corn starch and roast or air fry it—-so good, fresh, hot, or cold), maybe with shredded carrots or red bell pepper, or corn. I serve the tofu on quinoa with corn, red bell pepper, and an avocado dressing. Leftover fish of any kind.

I was surprised when my uber picky eater 10 yo wanted to eat the roasted seaweed I had for hand rolls/salmon (he likes seafood though). Maybe I will try my hand at sushi. Where did you get the supplies and skills? Even my non fish eater could do sushi if I left out all the fishy ingredients. He loooooves rice and soy sauce.

Sushi is easy to make with a little practice. You can buy sushi rice at Whole Foods, a rolling mat at WF or Amazon, rice vinegar at any grocery, and seaweed wraps at WF. Watch a couple videos on how to roll, and cover the mat with plastic wrap.

Japanese bento boxes are also about presentation.
I used to send my daughter into nursery school with the same sad ham sandwich lunch everday. One day I had to go there to celebrate her birthday with a small cake and got to see everybody's lunch. The Japanese kid had the most beautiful lunch. Peanut butter and jelly sanwich ROLLED into sushi swirls and sliced. A hot dog end sliced like a flower in bloom. Vegetables cut with cutesy patterns (you can buy the stamp cutters at Japanese stores).
My daughter saw this beautiful array everyday while she was stuck with my ham sandwich. After that I jazzed it up.

Anonymous wrote:OMG. The only weird thing would be bringing my mom's weird-a$$ sushi to school. My kids are in 4th and 5th grade and trading lunch items is huge. There is a lot of social capital involved. I don't agree but it is the case at their schools. They love having fruit chews and granola bars to give to kids whose parents think like you. But they don't trade for the sushi. They trade for your Trader Joes chocolate milk or your fancy sandwiches. Your kids are eating fruit chews while mine dine on your sandwiches!

My daughter loves when I make sushi to send her. Always has. She likes me to send extra as her friends all want some. Sounds like you can’t cook.

You cook your sushi? Sounds like you're just making crap bento boxes and calling them sushi. Wait until your kid tells you all about the Astro Brownie she traded for at lunch. She gave up her cucumber sticks and "crab" meat mixed with avocado in order to get the Astro Brownie and some chips. Mmmmmm....

If you make your sushi with raw rice people don’t trade.

Covering the mat with plastic wrap is very important and i don’t think this is traditional, but I spray it with a little oil and rub my hands on it.
