I’m into my sushi mat right now, especially for kid lunches.
What are some non-raw things you think go with sushi rice and nori? I think the champion is clearly avocado. I’m also thinking egg, cucumber, that sort of thing. I can’t seem to make chicken work. It’s always weird. But maybe steak? Bacon? Is that too weird? |
| OMG. The only weird thing would be bringing my mom's weird-a$$ sushi to school. My kids are in 4th and 5th grade and trading lunch items is huge. There is a lot of social capital involved. I don't agree but it is the case at their schools. They love having fruit chews and granola bars to give to kids whose parents think like you. But they don't trade for the sushi. They trade for your Trader Joes chocolate milk or your fancy sandwiches. Your kids are eating fruit chews while mine dine on your sandwiches! |

You can buy the krab stick stuff they use in California rolls at most stores. I think bell pepper would work well too, for crunch like cucumber. |
My daughter loves when I make sushi to send her. Always has. She likes me to send extra as her friends all want some. Sounds like you can’t cook. |

My Japanese father lived for many years in countries without Japanese restaurants and grocery stores. He received shelf-stable staples from his Japanese company for New Year's, the standard gift for expatriates, and he would make sushi filled with whatever he could find in stores.
This is how we ended up with celery sushi, carrot sushi, prune sushi, cocktail sausage sushi, gruyere sushi... He was desperate and he tried everything! Actually the sausage and cheese sushi were pretty good, but salty enough that there's no need to dip in soy sauce. The smoked salmon sushi was the best one, and I still love and make it today. Funnily enough, he never tried chicken/beef, but it sounds interesting. Maybe you could make a "burger" roll, with ground beef and tomato. So go ahead and try whatever the damm heck you want, OP. In honor of my father, I support you. |

You cook your sushi? Sounds like you're just making crap bento boxes and calling them sushi. Wait until your kid tells you all about the Astro Brownie she traded for at lunch. She gave up her cucumber sticks and "crab" meat mixed with avocado in order to get the Astro Brownie and some chips. Mmmmmm.... |

And just...old. Sushi is a very cool thing to bring for lunch in elementary school these days. Similarly, I was dumbfounded when my kid begged for roasted seaweed packs for their lunch like all the other kids. |

Frozen tempura shrimp from Costco. Air-fry, use a little bit of Tonkatsu sauce, roll w/rice and blanched asparagus or regular cucumbers.
I also make kimbap rolls with a protein like spam, tuna, any beef sticks, or hot dogs cut in half, and then add in some veggies like blanched spinach, carrots, sliced bell peppers, etc. |
