OP isn’t wrong. No one is baking pies for grade school parties. Generally, you either learn to love pie as your tastebuds change or you grew up with it 60 years ago. Both tend to an older population.
Agree. Plus pies are very time consuming to make. An apple pie from scratch takes nearly all day: make the crust, refrigerating it, peeling and slicing all the apples, rolling out the dough and shaping pie, chilling or again, then it bakes for over an hour, then has to cool close to warm/room temp to fully set. I only make pie for holidays.
I make pies regularly. It does not take all day! I cook and bake efficiently and can typically get a pie in the oven in a hour. It's even quicker if you get the dough made in advance, I do it the night before and it takes 20 minutes to pull together and then let it chill overnight. Apple pies are pretty straightforward and there is a reason for the old saying as easy as a pie.
Making the dough: 20 min
Chilling 20 min
Peeling and slicing apples 20 min
Rolling out dough, filling, and chilling again 30 min
Baking 60-80 min
Cooling: at least an hour
That’s not quick. Perhaps if you are going to do it in parts over the course of a couple days it isn’t that bad. But even just the bake time and cutting and peeling and cutting all the apples is significant
