Yogurt and chia

I posted the heathy filling snacks post.

Just bought some chia seeds, already have plain Greek yogurt.

Any favorite ways to prepare it? Do they have to soak for a while or can it eat it as is?

I put in a t of cocoa powder, a t of sugar, some cinnamon, and fresh raspberries. Not bad, but looking for ideas.

How is pudding a healthy and filling snack?
I'm looking for heathy and filling. I'm actively trying to lose some weight and I don't do fake sugars.

I buy low-fat Greek yogurt, I add a little water to my serving to thin it out (so the chia seeds have liquid to absorb), add 2 tsp chia seeds over top, sprinkle with a little more water. Let sit 15 min or so, add a tsp honey drizzle and some cinnamon on top. Sometimes I top with 2 tsp toasted sesame seeds and cardamom

I think chia pudding is actually made with some type of milk and the seeds soaked overnight. Then add fruit and other toppings.

Im pretty simple with mine. I soak 1tbs in fresh lemon juice for about 15 min and then add ice water. I drink that each night before bed. Helps get things moving in the morning.

My older boys are athletes and drink a ton of smoothies and they always add chia seeds in for added protein. They just toss it in the blender with the fruit and a scoop of protein powder.

PUdding is...

2 tablespoon chia seeds
▢1/2 cup almond milk or milk of choice
▢1 teaspoon honey or other sweetener, optional

or skip the honey and put vanilla.

you can google recipes.

There are about 60 calories in a tbsp of chia seeds.

Here's my recipe--
1 cup unsweetened full fat coconut milk
1 tsp vanilla
1/2 cup blackberries
1/4 cup chia seeds
In a blender, puree coconut milk and vanilla until it starts to thicken (about a minute). Add blackberries and puree another minute. Fold in chia seeds with a spatula. Let set overnight. You can add sweetener.

Wowsers, that’s 57g of saturated fat.

I got on the coconut milk bandwagon and went for a physical and my LDL cholesterol was the through the roof. So much so that I had to see a nutritionist and make a food diary. She identified the coconut milk, I cut it out, cholesterol went back to normal (as it had been my entire life) and I lost 5lbs I had packed on.

I now only use it very sparingly for when I cook creamy dishes that call for cream I sub it out. Even then that’s only maybe 2xs a month.

Agree coconut milk/oil is pretty terrible for you. Unfortunately, it is in a LOT of marketed heath and vegan food products.

NP but I think making our own things with real sugar (just a bit), so no high fructose, is a good start. So just buy pudding is not a good idea.

Disagree. Fat is not the problem. It’s usually your diet overall that has issues, or genetics. I cook with it daily, and I have perfect cholesterol- actually perfect numbers across the board.
