I got on the coconut milk bandwagon and went for a physical and my LDL cholesterol was the through the roof. So much so that I had to see a nutritionist and make a food diary. She identified the coconut milk, I cut it out, cholesterol went back to normal (as it had been my entire life) and I lost 5lbs I had packed on. I now only use it very sparingly for when I cook creamy dishes that call for cream I sub it out. Even then that’s only maybe 2xs a month. [/quote]
