Craving something creamy and mushroomy

But not something with cream of mushroom soup. Odd, especially in this heat, but I can’t stop thinking about it. Problem is I’ve never really made anything like it and don’t really know what dish it is that I’m craving. Any ideas?

just brown (good) ground beef and I use sour cream rather than creme fraiche (mostly because I have it on hand more often). Can use dry dill. Use 1# of the noodles and adjust up the other ingredients. I've used a variety of mushrooms with this and they're all great (esp. baby bella and shitake).

Maybe some stuffed mushrooms with cream cheese and whatever you’d like.

Chicken tetrazzini.

Poached chicken, mushrooms, wine, butter, parmesan cheese, veloute sauce made with chicken stock and cream, and noodles. Top with buttered scratch made bread crumbs, and bake until bubbly and crumbs lightly toasted.

Making it is a process but results are delicious!

^^If you don't want to cook in this heat, the Stouffers version is pretty good for a frozen entree.

Trader Joe’s has this new entree in the fridge section-fettuccine with mushroom cream sauce and vegetables. It was pretty good.

This combination is one of my favorites (During the pandemic, I’ve used cans, but you could obviously use fresh:
garlicy alfedo sauce
drained spinach
mushrooms drained
starch of choice (rice, pasta, even diced potatoes)
Sprinkle with parmesan if desired

You can add seasoning as you want. It’s pretty flexible, but the alfredo provides most of the seasoning. I’ve also done it with the ricotta, adding garlic, onion, and mustard.

I like it year round, but I tend to eat more vegetarian recipes in the summer and this is one of my favorites because it's so satisfying and filling. You're right it's not strictly a summer recipe (probably more fall, and goes great with zucchini, fyi) but I tend to make it often in the summer because it's a great replacement for a meat-based dish.

Thanks for sharing!! I’m definitely going to try a few of these.

I put my finger on where this craving came from—my French aunt used to make a dish of chicken with a mushroom sherry sauce served over egg noodles. I haven’t had it in years as she’s been gone a while. I’m hoping one of these will hit the spot in the same way!
