[/quote] I like it year round, but I tend to eat more vegetarian recipes in the summer and this is one of my favorites because it's so satisfying and filling. You're right it's not strictly a summer recipe (probably more fall, and goes great with zucchini, fyi) but I tend to make it often in the summer because it's a great replacement for a meat-based dish.[/quote]
