Summer = salads. I like salad, but feel like I need more variety. New dressings, new ingredients. I enjoy eating a giant bowl of mostly vegetable cooling deliciousness, but they need some novelty and pizzazz.
Can you please help me jazz up salad? |
| Add pickled banana peppers or spiced nuts or herbs |
|
Dressing
1cop olive oil 6 tbs cider vinegar 3 tbs Dijon mustard 1tbs honey Salt |
| Add roasted beets, toasted walnut pieces and feta |
| Make sure to always have something crunchy, something salty, something sweet, something zesty. |
|
I recently used the dressing from this: https://www.cookingchanneltv.com/recipes/michael-symon/peach-and-blue-cheese-salad-2042128
with sliced peaches (not grilled), blue cheese, prosciutto, and may have added some nuts, and it was a winner. |
| No need to add honey/sugar |
I came here to say this! Assuming pepperoncini is the same thing. It gives most any salad that extra zing. |
|
Glazed nuts (pecans, walnuts); fruits (dried cranberries or currants; fresh pears, apples, citrus; grilled stone fruits) and good cheeses (feta, goat, shaved Parmesan).
Tasty greens. Fresh herbs. |
| Cranberries, croutons, artichoke hearts, hearts of palm, honey mustard dressing |
|
I said pepperoncini, but I just remembered another!
A couple years or so ago I was making a chicken caesar-ish salad and realized I didn't have croutons or anything crunchy. I ended up crushing some everything bagel pretzel chips in and it was AMAZING. We now use it regularly as a salad topping. |
| I love roasted chickpeas in my salads. |
| I quick pickle veggies all summer (all year really) to add in. Toasted seeds (pumpkin or sunflower, toasted nuts, dried fruits like figs dates or cherries, roasted quinoa, chopped parsley and other fresh herbs, purple onion, lemon and tahini drizzle ; are all fantastic additions. |
And something fatty or creamy - like a soft boiled egg or cheese. |
| Raw corn kernels in the summer. YUM! |
