What type of things do you do that I really illegal and why

Ask anyone who owns a restaurant, and they will tell you that their staff does not have to pay for a glass that a patron takes, that the patron's business is worth more than that.

I am with PP - I tip in cash, because I have reliable reason to believe that waitresses don't always receive all of their tip money at the end of each night/shift.

I disagree that ALL SSI recipients are able-bodied to work.

There are many that are however.

I once employed a Nanny for my children & paid her only in cash wages so she wouldn't lose her disability benefits.

Technically yes bc you have neither committed the bahvior or act that could be classified as criminal (have not left the store without paying) nor do you have the correct intent (intent to stral)- to commit a crime or at least be found by a court guilty of committing a crime the prosecutor would need to prove both beyond a reasonable doubt- act and intent.
