Confusion on Keto

Hi all, I officially started Keto today and think I already messed up. For lunch I ate some salami which said on the package that it has no carbs but then I saw the ingredients and it has a small amount of dextrose. I guess that is not an artificial sugar after all and I am probably not supposed to eat it.

So if something says it has zero carbs but has trace amounts of sugar is that ok or no? Feeling confused about how that can impact ketosis but my friend said it does.

Anyone know?

If you were strict about serving size, then you had zero carbs.

Most processed meats have stuff in them. Some people on Atkins eat them, some don't. Was salami pure with nothing but spices from Italy?

I mean, does it matter that much if you aren't already in ketosis? I do think about the wisdom of "stopping" carbs suddenly (I'm doing keto too starting today!).

PP here- to say that it's not like you are ruining anything, and I personally question the wisdom of going "cold turkey" into very few carbs (although that's not based on knowledge just a thought - I think I've seen that this is one way of doing it, however, to go lower and lower carbs gradually).

I think it’s totally fine. Heck if you’re keeping your net carbs under 30 I think you’re doing great. I’m not militant though. I’m cool with “dirty Keto.”

I've lost 50 pounds on Keto and I would eat salami. Generally you want to limit the processed meat in your diet but you can have something like salami on occasion.

I keep an eye on my macros but I don't stress about keeping my diet perfectly clean. Mostly clean is fine by me.

I am on keto but I don't eat processed meat as there is no minimum safe amount nitrate-wise (and 'celery' in ingredients IS nitrate).

But I wouldn't worry about carbs in salami, you probably didn't eat too much of it.

Can you say more about this? My kids love lunch meat and I give it to them but feel uneducated about the dangers of nitrates.

What about the red in red meat or the pink in salmon? Is that just dye in lieu of nitrates?


From what I've read, they dye farmed salmon but wild-caught is red/pink naturally. I don't know about red meat because I don't eat it, I only eat poultry and fish.

P.s. nitrates are added not only for pink color, but also as a preservative.

I can't check the ingredients list to confirm because I am not in the U.S. - but see if there's celery - that's what manufacturers often disguise nitrates under.
