What about the red in red meat or the pink in salmon? Is that just dye in lieu of nitrates?

Are those lunch meats that say "nitrate free" safe? Or what else should i be looknig for?


I can't check the ingredients list to confirm because I am not in the U.S. - but see if there's celery - that's what manufacturers often disguise nitrates under.


That's so funny; I'm not in the US either and was thinking maybe it was a dumb question because it might not apply to here.
But I am curious if there are certain markings I should be looking for - for instance, if it says 'nitrate free' I assume that's safe?
