Eggs are used in most baked good and lots of recipes. It's not just about limiting egg salad sandwiches, breakfast items and deviled eggs.


I cook for my meat-eating DH every night, and not once have I ever stopped and said "dang, I need eggs for this meal". Are people baking cakes and cookies every night and making your own pasta? Honestly, what are you cooking every day that requires eggs?


Chicken cutlets, carbonara, Ramen, quiche , frittata, fried rice…

My teenagers are big egg eaters. Each will eat 6-9 at a time if they are scrambled, 3 at a time as an omelette with other stuff in it, 3-4 if it’s eggs Benedict etc. They will snack on hard boiled eggs. They like crepes and the batter uses eggs. I put several eggs in fried rice. I use an egg when making chicken scallopini or meatballs. One loves egg drop soup. We go through 2-3 dozen a week.


I will say though that eggs prices at least in CA are really variable. Whole Foods today had a dozen for 3.99, Costco where I normally shop is 6.99 for 2 dozen. It would be even cheaper if I was willing to buy the big 5 dozen pack. At Safeway a dozen was over $11.

Milk at Costco is 5.99 for 2 gallons while Whole Foods is around 8 for a gallon as is Safeway but Target is around 3.99 for a gallon.

It’s weird that something which is a commodity has such huge price variance.

I’m vegan too- have you noticed just egg product has gone up in price? It’s doubled in the past year, I swear. I know they changed the container but still.. I found wunder egg at WF on sale though

Stock up now, it’s going to get worse. Here on the east coast we’ve had so many “layer” facilities go down, millions. That’s why. But there’s no end in sight unless farms start making barns airtight with filters
