Maybe make some carrot cakes for nursing homes or fundraisers?

Invite friends over, so it becomes a baking party.

You could also gift some to a food pantry (and or family shelters)

A nursing home is not going to accept a randomly dropped off homemade baked good.

Food pantry donation. Seriously. I would have no interest in dehydrating, canning, or freezing carrots. I’d keep 5 lbs and donate the rest
