Here's a recipe I found but have not tried: https://www.indianhealthyrecipes.com/carrot-halwa-recipe-gajar-ka-halwa-recipe/

People enjoy this on its own, with nuts, whipped cream, or vanilla ice cream.

50 lbs of it??

15 lbs of carrots serves 50 people, so I guess serve 166 people carrots?

What an awful thing to give away to a "Friend." Now you're stuck disposing of 50 lbs of carrots.

The food pantry near me had 50lb bags of carrots last year. I guess they divided them, but they had a bag or two left over at the end. They weren't animal feed. But that last bag sat outside for a few days. There's only so many carrots you need.

Take a trip to a horse barn or petting zoo with the family and some of the carrots.

this stuff is so so good! you can also just do one with the carrots sliced into strips and green chillies- looks super elegant.

A neighbor once accidentally ordered 10 bunches of bananas instead of 10 bananas. She put them on her porch and sent out an email. They were gone in 2 hours

I'd grate a bunch using the food processor and then freeze for future muffins. (This is also what I do when zucchini abounds.)

I'll have to look into food banks. Most of the ones I have donated to in the past only take nonperishable goods.

But the bag came from a friend who had been given about 7 bags.

This just invites more questions! Who was the friend? Who gave her the 7 bags? Were they 7 50-lb bags, and you got one of them? What made her think that you would want the 50 lbs? (I think I'm the first person in my friend group whom people would think of if they had too many carrots too.)

You are annoying.

DP, they're not. I am also curious how someone comes into possession of 350 lbs of carrots.

There are food auctions weekly that auction off huge quantities of perishable produce to the highest bidder rather than throw it out.

DP- and who can use 350 lbs of carrots before they go bad??

People often donate them to food banks or churches or soup kitchens, or share. I have a friend who goes to these, and she always shares - fresh, if possible, or she freezes or cans then shares.
