OP here. Thanks for the ideas!

I'll have to look into food banks. Most of the ones I have donated to in the past only take nonperishable goods.

But the bag came from a friend who had been given about 7 bags.

This just invites more questions! Who was the friend? Who gave her the 7 bags? Were they 7 50-lb bags, and you got one of them? What made her think that you would want the 50 lbs? (I think I'm the first person in my friend group whom people would think of if they had too many carrots too.)

Food banks and their recipients do accept fresh produce and itโ€™s very much appreciated!

I disagree, a 50 pound bag of carrots is like what someone buys for a horse, not for human consumption! The largest bag you can buy at Costco is 5 pounds. I canโ€™t imagine receiving 50 pounds of carrots and trying to figure out what I can cook with them and instead of not donating them to people in need.

DP, they're not. I am also curious how someone comes into possession of 350 lbs of carrots.

carrot soup, freeze small portions

slice, cook, freeze as sides, reheat in little butter

All gone.
