Snow day cooking/baking ideas?

Snow cream.

That's ice cream made with snow. Set out large bowls or trays before a snowstorm and make snow cream once they're full. I did this a few times with my kids when they were small and it was great fun. Before anyone screeches about the health risk, I mean, eating small amounts of fresh snow a few times across several years isn't likely to poison you.

There are numerous recipes you can find online, but the idea is basically just whisk your prepared (chilled) liquid into a bowl of snow. It doesn't seem like it's going to work, then it pulls together in a matter of seconds. It can be as simple as heavy cream plus sugar and vanilla. Or you if you want something more complicated (chocolate, coffee, fruit puree, etc.) you have to heat and dissolve stuff into the cream first then chill it for a few hours before mixing it into the snow.

I made chicken noodle soup and nyt no-knead bread today. Should be good to go tomorrow!

Thank you to the poster who said they are making PoY tomato-tortellini soup - my family enjoys that soup and I had forgotten about it!

Thank you to the Chicken A La King poster... I made it for dinner and it was so good! Hadn't had it in probably 30 years.

Made focaccia and tomato soup today. Not much soup left but still 2/3 of the foccacia.

Unsure what to do tomorrow - my parents dumped too many Xmas cookies on us to bake anything sweet or breakfasty. They're going stale and we can't give them away.

For dinner, thinking about bean bowls or nachos with a bunch of topping choices. Or kielbasa, sauerkraut, and mushroom soup.

Dcum loves to trash baked ziti/lasagna, but that is what I am planning to make on this snowy day.

Pancakes and hot cocoa in the morning

Leftover soup and grilled cheese for lunch

Lasagna and caesar salad for dinner!

Got TJ's chocolate croissants already baked. Will make bacon for DS when he wakes up to have with a smoothie.

We are both working from home today but have chicken orzo spinach soup leftover from last night, though I prefer Amy's tomato bisque, plus ingredients for toasted turkey sandwiches.

Tonight a big vegetarian lasagna, garlic bread, and salad. Tomorrow, vegetarian chili and honey cornbread.

We'll bake brownies today, too. They're even better with chopped up leftover Christmas candy (chocolate, caramels, nuts, Andes mints if that's your thing...).

I usually do some batch cooking over the weekend to have things to take for lunches, but the kids will work on them now too. DH and I have to work. (I'm an RN and he's a police officer--no tele options!)

Pulled pork
banana/choc chip muffins
Sausage gravy and biscuits

That warms my heart, PP So glad you liked it - my mom made it a lot growing up and it's one of my comfort food/snow day favorites.
