Agreed. I really don't understand people who feel the need to voice their judgment when no one asked for anyone's opinion, just meal ideas. I think deep down they are very unhappy people. Maybe they should eat some meat and be a little happier.

Sunday is chicken soup day. Sometimes with broccoli.
Impossible meat tacos with black refried beans Roasted salmon with dill sauce, salad and rice Panko coated fried chicken tenders, cucumber/tomato salad and a side for kids (orzo or other pasta or tater tots) Broccoli cheddar quiche with side tomato salad Sauteed tofu until crispy, stir-fried veg and rice Turkey scaloppine with lemon and caper sauce. Seasonally we also do butternut squash lasagna and short rib stew. Kids will eat all of these. 5 year olds faves are the chicken and tofu meals. She likes her protein crispy on the outside. |

My kids are still little/picky so it’s like pasta + protein, scrambled eggs & toast, grilled cheese, rice + protein on rotation. We do pizza on weekends, sometimes beef burgers for them and veggie burger for me.
For myself, I make a rotation of red lentil soup (which my oldest is finally starting to eat!), sheet pan roasted veggies, rice + veggies. (I’m vegetarian and boring I guess but I like it!) |
What’re sheet pan pancakes?? |
They are my new to me favorite way of making pancakes. Just mix up a batch of pancake batter, pour it on an oiled sheet pan, add toppings like blueberries or chocolate chips, and bake at 425 for 20 minutes. https://www.budgetbytes.com/sheet-pan-pancakes/ is a recipe from scratch but I generally use pancake mix...store brand if I want to be cheap and Kodiak if I am feeling fancy. I will never stand around pouring and flipping (and messing up and burning) pancakes again! |

If I had to choose 4 that they would both reliably eat:
--pasta and marinara sauce with hidden veggies (spinach, bell pepper, celery, garlic, onion, sometimes carrots), sometimes served with frozen meatballs, salad --tacos (I switch up combos of ground beef/pork/turkey and always add riced cauliflower) --chicken sandwiches, salad or kale chips, watermelon --teriyaki fish or Wegman's rotisserie chicken, homemade mashed potatoes and roasted broccoli |
|
Fish tacos
Rice bowls with salmon Udon or other noodles in broth with shrimp and veggies Rice and black beans with salsa, avo, cheese Bonus to make my kids happy: Bbq chicken or pork sliders on Hawaiian rolls |
Just wait til I tell them my four top meals from Trader Joes! |

Everyone stir frying their veggies and rice-- do you do it together or do toppings go on the white/brown rice?
Also, what stir fry sauces are you using? I love stir fry but mine always comes out gummy. |
I’m totally down with vegetarians/vegans if that works for them and they are healthy. My friend and her family are vegetarian and they’re always sick and she is always sad/complaining/generally disgruntled with the world. I would never tell her this, but I do sometimes wonder if she would be happier if she ate a little meat! |
Who is your chef/where did you find them? |
Thanks! Pancakes are a major food group at our house so I want to try this! |
