| I have a boatload of leftover pesto after overestimating what I needed for an event today. I (think) I can freeze much of it, but what's your best recipe using peso? I have most kinds of meats in my fridge (steak, chicken, pork, ground turkey, ground beef, shrimp, salmon), and plenty of other generic basics. |
| Pizza! Try a variety of breads or flatbreads, a few veggies (spinach, tomatoes, red onions go well), and try some different cheeses. |

| I just made some pesto Stuffed chicken. Butterfly chicken breasts, spread pesto, add some bacon if you want. Close up, put in the pan. Put some Italian dressing over it and season. Add parm cheese over the top if you want. |

Mixed fettucine (white and green), with bite-sized chunks of grilled chicken, peas, and a sauce that is half pesto and half alfredo (make it a little thinner than the usual alfredo, and cut the cheese down a little, to keep from going into creamy fat overload).
You could also toss in mushrooms (quartered and browned before they go in), but that might be the one ingredient too far. |

Speaking of which, you can do a modified caprese salad appetizer with sliced mozzarella, spread pesto on it and match to sliced tomato, stick with a toothpick. |
