I think you've got it all covered, but if you were kind of set on parfaits (from your original post) - you could preassemble them in those small plastic disposable wine cups and put them on ice. You could add granola on top last minute, or people could just top with granola. Just leave enough room in the cup so there would be little mess! |

I would entirely eliminate the french toast as well as the breads.
Quiche, ham & biscuits or rolls, and the mac n cheese will go well together. Then you have your fruit tray, and I would add a green salad. Lastly, some cookies or brownies for dessert. Or I suppose you could keep the breads and that would be your dessert. |

This all sounds good to me (including the addition of the ham)-- I would just wonder about amounts and the number of guests. A few weekends back I hosted some family members for brunch and made a very similar menu with quiche and baked French toast, etc. I was shocked by how much of it we consumed, and there were about 8 adults and 6 kids, so a smaller group than yours.
Though I suppose my initial reaction was pre-ham suggestion, so maybe it'll be plenty with the ham? I find that determining amounts is very hard!! |
OP here. Thanks to everyone for all the help . Final decision was to add some brownies and dessert type goodies , plus ham biscuits with some different mustards . I loved the parfait advics but my husband is worried about the mess still. Thanks pp, may do that at another event. I am worried about portions now , such as do I have to have 1 of each item for each person ? So enoigh for everyone to have 1 of each , assuming some people won't have anything , some may double up, and it wil even out in the end ? I would count the kids as 1, even though they don't eat much historically. We don't mind leftovers |
