OP here , by General consensus I need to do ham and am leaning towards ham and biscuits
Can I get away with pre made biscuits and ham steak , with mustard , maybe 2 types , for condiments ?


No, you must roll your own, with leaf lard from humanely raised pigs and White Lily flour!

Seriously, I'm sure there are good biscuits out there you can buy. I'd have a spicy dijon, a non-spicy mustard, and maybe some hot pepper jelly.

Well, yes, but that doesn't mean you can't do it. It's not like a violation of the Virginia ham code or anything.

But OP, if you're inviting any ham purists, you could either do the honey baked with rolls, or get a country ham with biscuits.

Just meant that city ham usually is served with sift rolls, while country Ham with small biscuits.

It all sounds really good. I'd go with the ham and biscuits/rolls separately so if people are feeing breaded up they can just take ham as a complement to quiche or other items. I would not do bagels - it's more bread and doesn't really go with the theme.

I would do away with the sweet breads and replace them with cookies or brownies. You already have French toast, quiche with crust, and now rolls or biscuits for the ham.

I really like a good smoked salmon, but I wouldn't do a bagel spread. What about smoked salmon canapes, on baguette rounds with a bit of creme fraiche and caviar? (By that I mean reasonably priced domestic caviar, no one expects Russian sturgeon at Sunday brunch.)

Sounds like a great menu! Besides the ham, I would also add a veggie tray. Lots of carbs and sweets - need to balance it.

Can you do something a little on the light side? It's just a very heavy menu (and I'm a little biased since I don't like some of the options) but maybe some fruit or something?

Once you add the ham and rolls, I think you have way too much food for 15 adults. I would eliminate one or both french toast casseroles, or one or both quiches. You're going to end up with a TON of leftovers.
