What’s your best meal for 10 when you just can’t

Personally, I’d buy three cooked chickens and some quality loaves of bread, and I’d make a big salad and bake a bunch of small Idaho potatoes (with butter, sour cream, and chives). Add a premade crudite tray or make a cheese plate for appetizers. Buy a cheesecake and some fruit for dessert. Not a popular opinion, but as a guest I’d hate a taco bar or slow cooker chili.

I'm curious about the small baked potatoes - how do you serve them? (I have a Costco size bag of small potatoes to use - we usually make them smashed)

I'm a fan of one pot / one pan meals for a crowd. Do you have a very large roasting pan? If so, I like to do a greek-style lemon roasted chicken. Put in 2 whole chickens, 5 lbs of red potatoes (cut into chunks), and a pound of carrots (cut into big chunks). Squeeze 2 lemons over everything. Generously season the chicken an vegetables with salt, pepper, rosemary, oregano, and thyme. Drizzle olive oil over everything and add a cup or two of water to the bottom of the pan. Roast in a 375 degree over for ~1.5 hours. Remove the chicken to let rest. Stir the veggies and turn the heat up to 425 and roast the veggies for another ~15 minutes. Cut the chicken up into pieces and serve with veggies. Homey, hearty, simple.

Nice. I'm sure 2 smaller roasting pans work just as well.

I’d definitely do frozen lasagna. Easy enough to make a big salad while it’s cooking. Throw in some baguettes, wine, and ice cream for dessert, and nobody will complain. Doesn’t even need to be costco, you can just do Stouffers.

For the salad just do iceberg, mini cucumber and red onion. No peeling or salad spinning required!

Am I the only once who thinks tacos is actually an annoying amount of work? You start out thinking it is a quick meal but then have to do the meat, drain it, cook with seasoning, cook the shells, chop/grate toppings and put out a million little things.

I'd buy a bunch of steaks.

You can slap them on the grill when you get there, and some people are really proud of their grilling prowess and may try to take over for you... (if you arent exhausted). Grab a giant salad and corn or carrots and throw them on the grill too.

That is assuming the cabin has a bbq.

Do you have any time to cook before the trip? I would make a big batch of chili and pan of cornbread. Bag salad or purchased veggie tray.

I agree with this. I think some sort of one-pot wonder type of meal is WAY easier than a taco bar. Also less to clean up. And speaking of one-pot wonders... no one has mentioned a paella/aroz con pollo type of thing. You can make with just chicken and sausage, or add seafood too. In a large dutch oven, I brown chicken and sausage, then saute onions/peppers/garlic/smoked paprika/saffron. Add rice, tomatoes, and water. Arrange meats on top. Bring to a boil, then cover and put in 300 oven for 25 minutes (can add pees or green beans in the last 10 minutes).
