What’s your best meal for 10 when you just can’t

Meeting extended family at a “cabin” next weekend. I have Saturday dinner duty but just got dumped on at work. The takeout/grocery stores in the area are best avoided. So I need something I can buy Friday night or en route Saturday and put in a cooler in my car for 2 hours. (Also possible I can’t make the trip at all and DH needs to “cook”, which means reheat/assemble, minimal prep).

Just make spaghetti. I would buy Rao's marinara and doctor some of it up with bulk Italian sausage and some of it with veggies (I would do sliced mushrooms, green pepper, and maybe some shredded zucchini).

Add garlic bread from the freezer section and bagged salad with bottled dressing.

This is more than fine. And if DH has to do it, and is helpless, just skip the Italian sausage and veggies, and he can just heat up the sauce.

Cool taco meat ahead, package up taco fixings like lettuce, cheese, salsa, tortillas, guacamole…heat up when you arrive. Buy cookies for dessert.

Pulled pork and chicken sandwiches, with sides. Get 2 family packs from a good bbq place. The meat reheats easily.

Large salmon filet: smother with honey, black pepper and fresh garlic (minced) and bake for 5-10 minutes. Sautéed garlic or sautéed asparagus. White rice. Nice salad. Crisp white wine. Can’t miss and you can pull it all together in 30 minutes.

One side of salmon does not feed 10.

Just get 3 lasagnas (or other premade refrigerated food) from Costco. Salad and garlic bread. If you feel up to it do a cheese board app. People are there to be with you not eat an elaborate meal.
