I'm lucky: my kids and dh will basically eat
most anything. Lasagna tonight. Chicken pot pie tomorrow and I haven't thought about the rest of the week! |
LOL, we had lasagna last night. Chicken pot pie is an option later in the week, however. |

DD4 will have pasta with leftover sauce made last week. DH and I will have salad. It's not even gonna be a fancy salad. Groceries are coming tonight, but knowing Peapod, it'll arrive toward the end of the delivery window (i.e. bedtime).
This week's menu, other than tonight, is: - breakfast for dinner (scrambled eggs, black beans, tortillas) - baked tilapia (seasoned with salt, pepper, lemon) with roasted broccoli - shrimp scampi with risotto and roasted broccoli - black bean and cheese enchiladas - homemade pizza and salad - vegetarian chili (using veggie crumbles and 3 kinds of beans) One other night this week is probably going to be the night that DD gets to have mac and cheese because I've got an evening work thing and DH is not the chef in the family. I will say that I'm vegetarian, so on the nights when DD and DH have seafood, I will make something else for myself. On fish night, probably I will marinate and bake some tofu with similar seasonings to the fish. On shrimp night, I'll probably just eat risotto and veggies. |
| Wondering what to do if DH *AND* children are picky and won't eat meat or fish? No one can eat pasta every night, that would be ridiculous! NP here. |
Vegetarian PP here. I don't eat meat or fish. On nights when DH/DD are not having seafood as their protein, we get out protein from beans, tofu, eggs, etc. I was raised vegetarian so the idea that you have to have a meat entree, a veg side and a starch side is not something that I ever experienced. Last week we had curry (chickpeas, cauliflower, carrots, onion/garlic, coconut milk and seasonings) and two stir fries. One stir fry had tofu, broccoli, water chestnuts, red peppers, baby corn, carrots and celery. The other was all the veggies but no tofu and served over quinoa. That said, if your family are picky enough that basic meat/pasta dishes are not going to fly with them, maybe they will not be into curry and stir fry either. In that case, breakfast for dinner. I get a lot of mileage out of scrambled eggs. |

http://www.highheelsandgrills.com/2012/09/8-can-taco-soup.html I change this up by making my own "clean" versions of cream of chicken soup, taco mix, and use rotisserie chicken or cook up a bunch of boneless chicken thighs in the crockpot, shred it, and freeze it portions. I'm not wild about using canned chicken and the other pre-made stuff, but I've done it in a pinch and we haven't died from it. This soup is delicious and my kids love it. We serve it with sour cream, cheese, avocado, and tortilla chips. Comes together in minutes so I try to keep all this stuff on hand for when I need something quick and hearty. |
