On nights when DH/DD are not having seafood as their protein, we get out protein from beans, tofu, eggs, etc. I was raised vegetarian so the idea that you have to have a meat entree, a veg side and a starch side is not something that I ever experienced. Last week we had curry (chickpeas, cauliflower, carrots, onion/garlic, coconut milk and seasonings) and two stir fries. One stir fry had tofu, broccoli, water chestnuts, red peppers, baby corn, carrots and celery. The other was all the veggies but no tofu and served over quinoa. That said, if your family are picky enough that basic meat/pasta dishes are not going to fly with them, maybe they will not be into curry and stir fry either. In that case, breakfast for dinner. I get a lot of mileage out of scrambled eggs.[/quote]
