we were away all weekend so this is what we currently have scheduled...
-last night we made pizza with TJ's dough -tonight: salmon for DH/Chicken for me (I don't eat fish, he doesn't eat meat....it's a challenge to say the least so we only do animal protein once a week) with pilaf and roasted asparagus -tomorrow: (my gym night) manacotti and salad -Wednesday: veggie chili and cornbread with roasted hatch chilis in it -Thursday: (my gym night) tofu stir fry of some sort -Friday: ugh haven't thought about it!! for those with part veggie part meat eating families, try kitchentreaty.com - it's a good resource for "blended" families. We have a 1 year old so he eats whatever I put together for him ("eats") and we eat after he's asleep since I get home around 5:40 and he starts bedtime routine around 6:30. |
| Tonight it's a maple chipotle chili Brussels sprout and sweet potato hash with leftover roasted pork loin chopped up into it. Maybe topped with a fried egg. Tomorrow probably rotisserie chicken bought yesterday, with bread and a simple veg. Another day this week we will have kale, white bean and chicken soup made with leftover chicken. Maybe throw some smoked sausage in that too. |

Family of 4. Kids are fussy eaters so I have to make sure there is something for everyone.
Curry chicken, dum aloo, dal with cumin tadka, parantha, peas pulao. cabbage-cucumber-tomato-onion salad with lemon juice dressing. Dessert - Activia peach flavor with sliced fresh peach. Tomorrow night - Tod mun pla with sweet dipping sauce, eggplant-broccoli-capsicum-baby corn in red curry sauce, brown rice. Dessert - Mango Icecream Wednesday - McDonalds... and watermelon. |
