Some of them do get to write books - Angela Kelly, the Queen's personal dresser for like forty years was given explicit permission to write about her life and profit from it while still serving. Others were written off and blacklisted for the same thing - the Queen's nanny as a child wrote about her and Margaret and the royal family went after her. She ended up in the poor house. Diana's butler wrote about her after her death and the royal family hates him but he still made millions.

I guess it just depends. Also a lot of their assistants/high ranking aides are the children of or married to second or third-born aristocrats. They know they'd be iced out from their circles if they revealed too much.
