Oyster stuffing?

In our family, other people do turkey, potatoes (sweet and white) and pie, and I do the veggies and stuffing. I like to try one new recipe each year, but the last 2 year's veggie recipes (Brussel sprouts with bacon and balsamic, and roasted fennel and carrots) that people want to repeat them, so I figure it's time to try a new stuffing recipe.

I found a recipe for oyster cornbread stuffing, does that sound good to people? I think it might be fun to step away from the sourdough/apple/sausage/raisin stuffing I've made for the past few years.

If so, I've never cooked with oysters. The recipe says you can ask your "fishmonger" to shuck the oysters for you and reserve the liquid. Is that actually a reasonable thing to ask? Could I ask the guy at Whole Foods or do I need to go to a special fish place?

Also, what are people's thoughts on this recipe? Does someone have a better one?

I like shitakes and leeks a lot, and it calls for jarred oysters which might be easier.

And then I found this one, which would mean I could still have my sausage too

do oysters with regular stuffing. be generous with the oysters. buy them from giant or safeway in the container already shucked. you can use some of the juice for flavor

Do they always see them already shucked at Giant? I have never noticed! That is so cool.

Yes but they're not "from" the giant seafood dept.

I'm hoping they're "from" the sea, but I'm not sure I understand what you mean. How do I find these already shucked oysters if not in the seafood department?

I mean there is not a person shucking oysters and putting them in a container at the store. It's just another fresh product. They are in or near the seafood dept usually in ice right in front. sorry for the confusion. they should be front and center this time of year. WF should have them too. pretty standard.

Now to decide which recipe to put them in. Cornbread? Mushrooms? With or without sausage? Bacon?



we do it with the regular stuffing with onions, celery, apples, mushrooms (I think) and whatever else you like with lots of oysters some butter and some oyster juice and bake it. I don't think sausage or bacon would taste good with this. I would do that one separately but by all means have fun experimenting!

We do the same as pp, but with no mushrooms. So basically classic stuffing with oysters and oyster juice. Delish!

My mom also adds water chestnuts to her oyster stuffing.
